About Vacuum Dried Chickoo
Chickoo, or sapota, sliced and vacuum dried whole. Naturally malty and sweet, with the soft brown colour of the fresh fruit.
Why vacuum dried
Chickoo ripens fast and bruises faster, so it rarely travels well. Drying captures it at its best.
Drying is done at low temperature under vacuum rather than with heat, which is why the colour, shape and aroma of the raw produce stay recognisable. Fruit is handpicked, washed and sliced, dried, then packed by farmers in barrier bags with a modified atmosphere.
